Sanctuary at six

The architecture of morning light

Alabaster stone, precision-extracted micro-lots, and butter-laminated pastry crafted daily in quiet surroundings.

The Interior

Alabaster stone and south windows

Constructed from natural alabaster stone, white oak, and brushed bronze, the room is designed to quiet the city. South-facing glass captures the early sun, casting long architectural shadows across marble tables as the first extractions pull.

Every surface is chosen for its tactile honesty, creating a serene environment where morning ritualists can pause before the day begins.

Our Rule

Light roasts to preserve floral notes. No dark roasts, no syrups masking the bean.

Daily Lamination

We partner directly with growers who prioritize terroir and single-origin transparency, selecting beans with distinct stone-fruit and floral profiles.

Calibrated temperature profiles and exact brew ratios ensure every cup highlights the inherent qualities of the harvest without bitterness.

Our viennoiserie undergoes a three-day butter-folding process, resulting in an open crumb structure and shatteringly crisp crust.
